I like to grow colorful vegetables. So, I choose blue potatoes. They also have more antioxidants than other potatoes.
You plant in the Spring and bury every foot or so and about 4-6 inches deep. As the green top grows it is best to add more dirt or soil on top and you will get more potatoes.
To preserve them for the winter you can cover in peat moss and keep in the basement or a cold storage room.
Make sliced crispy potatoes or French fries
I leave the skin on as there are many nutrients and they taste good. I rinse the potatoes off and then slice them.
Then add some olive oil or other oil you prefer.
I add some rosemary as well. Lightly sprinkle the rosemary or loss if you prefer. Rosemary is very easy to grow as well and then you will know it is safely grown.
Then I cook them in an air fryer or the oven. I cook at 400 degrees for 13-20 minutes depending on the softness or crispness you want.
Or slice in a mandolin.
